After watching your video again, the light bulb finally went on...I was using 2% milk instead of whole milk--just habit, that is what we drink, so that is what I grabbed--so I added olive oil, and it worked. Probably not the same as using whole milk would have been, but at least I don't have to throw this one out. I will use this for lasagna I think, and try again with whole milk for eating out of the container.
Help--- I have tried this three times, and always come up with lemon milk--I never get curds. Do you use rennet? I let the milk and cream come to a soft boil, then add lemon juice, and nothing. What am I doing wrong??
I'm sure it's tasty, but it's not ricotta. There seems to be a global trend to do things like in this video (really just curdling milk/cream using heat/lemon/vinegar) and then (wrongly) call it ricotta, however. So, enjoy! (But at least read on Wikipedia what ricotta really is. And then visit Italy and try a real, high quality, artisan ricotta and you'll know the difference!)
@01Woof you can simply drink it. Flavor it lightly with some salt & pepper if you want. It is great for dehydration, & for people sufferubg from sever indigestion. In India we give it to the babies too.
