  • Not sure what it is but in between laying down the lemons and the star anise the editors left out another spice. You can see it on the lemons when they shoot the close up of Gordon putting down the star anise... would love to know what that is...

  • Someone tired to correct his pronunciation of "herbs." The "h" is only silent in the US. For the rest of the world "bro", all the letters in "herbs" make a sound.

  • Okay I just tried this. First off, when he says 190 degrees he's talking about celsius. For those of us in the US, that means about 370.

    Second, I don't know where he got his pink gragefruit, but the one i got made the sauce way too bitter to be eaten. I ended up adding sugar, a little vinegar, and lemon juice to kill the grapefruit, which turned it into more of a lemon sauce, but was okay. Maybe they have sweeter pink grapefruit in the UK.

  • The amount of effort and ingredients to make such a small amount in the end. Anything would taste better if you pour that amount of oil, salt and citrus juices all over it.   • @WPeiyi hollandaise sauce. Very easy to make and those were coriander seeds... they come from the cilantro plant.

    I think because it's a TV show after all. Unused oil looks better, whereas the oil where the lemons were caramelized will contain food and spice fragments, possibly not the best topping. I would use the oil from the pan, personally, no harm in it.

  • @AzoreanoStar21 star anise... its a chinese spice. They can make a big difference in certain foods. I use them in a chili that I make.

  • @neonachoxx mayonnaise does not cook the yolks and it's a cold emulsionated sauce, and hollandaise lightly cooks the yolks over a bain marie and it has to be served hot, but you've to be careful not to overcook the them, otherwise you'll have scrambled eggs

    not true. Hollandaise sauce is made with *clarified* butter, for which oil is about as direct a substitute as you can get. so he made the right call; he actually mentions this in the video itself.

  • I love Chef Gordon & he is my inspirational people as a chef. But however, of all of his recipe, I have to disagree with the Hollandaise he made here. You don't call Hollandaise as Hollandaise if you did not make it with butter. As we see here, Chef Gordon using Olive Oil, therefore, it should be call Mayonnaise.

    Just an information for all of you so that you won't get confused.

    I wouldn't call it mayonaisse. The yolks are cooked. Also the addition of citrus brings it back into the realm of hollandaise.

  • @miyu93 as he stated, the fish is steamed in the tin foil so the flavours of the garlic are still fully set in the salmon. Also, if you cant afford that much garlic your probably eating kraft dinner every night.

  • @jamzformj Why wouldn't it? Salmon is very healthy fish to eat and it's prepared by simply baking and not introducing much fat into the cooking. Only thing is the mayonnaise that has any real fat.

  • @jamzformj Really, yes. Salmon has wonderful healthy fats, protein (google it for nutritional profile), and the cooking method didn't include much unhealthy fat. The hollandaise sauce isn't even made with clarified butter, but olive oil, so that can be interpreted as a healthy twist.
