The menu which opens next to Convert selection and contains the list to follicles to start curves to rest curves \ to Current Positions to hair systems. etc etc to start and Rest End CVs does not show in the video.

Scaling the hair requires dragging the mouse left or right to change the height of the hair which you neglect to mention...
