I'd suggest giving the chicken a 24 hour marinade in buttermilk. I know, but it's worth it. Also, I wouldn't put the seasonings in the flour, because most seasoning burn at low temperature. Rub the seasoning on the chicken, then dredge them, that way, they stay safe under the crispy skin. Also, try pan frying them. Deep frying them smothers the chicken and makes it really greasy. And try frying it in shortening.

@lauls85 I can't get buttermilk in France, so I've never tried this recipe using it. From what I remember of buttermilk I suspect 9 out of 10 people wouldn't notice the difference if you used full-fat milk, skimmed milk, buttermilk or sheep's milk!
