This is waaaayy inaccurate... he did not put multiple midi instruments on one channel..... he did show how to drag sampler onto drum rack which is really great for drums, but he didn't even do it the right way by mapping chain selector to the macro knob etc...
By having multiple instances of Simpler via a rack we can trigger multiple instruments (could be Operator or other instrument) with the audio leaving the same channel.

Many tasks can be achieved in multiple ways in live. The demonstrated technique got the desired result. Besides mapping to the macro knob first would work but would be an extra unnecessary step...
I dont THINK this is possible. Out of interest why would you want this? If its a bad bit of gear you could use something like Bomes midi translator to block the CC message for pitch bend.
