The ratio is raw wheat is 35% for head retention and body and 65% malted barley for the sugar to produce the alcohol and color. Get a clue!
Gueuze is my favourite beer too. The price charged in US is extremely high though. I buy Gueuze Girardin from the brewery at less than 4 euro per bottle.

Fun show to watch on Lambics. Of which I say are a developed taste. I would expect that the bacon has an impact on the tasting. I believe it's always best to use crackers or water to keep you palate clean and do a tasting uninfluenced by outside food, etc. Even doing side by side blind beer taste go better when cleansing the palate. The grapes used are merlot and cabernet-franc. the grapes are soaked in Bordeaux barrels containing two to three years old lambic.
