why do they stand so akwardly during a serve?? Isnt middle always the best for the receiving side?

Not necessarily; most people stand in such a manner as to allow their most powerful stroke (forehand) to have priority in returning service. Also, standing closer to any particular side as opposed to the middle allows for better, wider angles for the return than would be allowed standing in the middle.
