First the horses disappear (i think... ), and the wagon just simply falls off a cliff... and suddenly that was enough to rocket them across this huge canyon?!!? And if it's so simple for them and a heavy wagon... why don't their pursuers just simply leap over this (apparently) deceptively large canyon???

no it was even worse in van helsing! A team of horse could not hope to get up enough to spped to jump any gapas  the micro-second a horse runs out of solid groud it will not fly it will plummet. Also convincing a horse to do this would not happen.
