Emeril appears to be a loving and caring man. I must object when he calls food with ingredients from animals or dairy Green. Sorry man, you need to take it up a notch and reserve your Emeril Green Recipes for vegan dishes.
Nothing wrong with stuffing in the bird (just start with it hot) .All the spices i can think of to put into the butter and maybe a little bacon fat. A roasting bag + the hot stuffing really cuts down on the cooking time.Betty Crockers Sage dressing is simple and tastes fantastic..
Thanksgiving and all of its accompanying traditions began as a pagan feast, honoring Pagan agricultural gods, which dates back thousands of years. A goose used to be the main course for the Pagan harvest festivals .These birds representing the sun god and was replaced by the more common turkey in America.
The Pilgrims observed a Three Day thanksgiving in the fall of 1621,this was the same way , Pagan Rome celebrated there Pagan goddess Ceres in Rome and Athens

I'm confused.....the recipe contains meat. Meat is not green. It causes more greenhouse gases than all the cars, planes and trucks in the world combined according to the UN.
Well, you can get it free-range and organic. Check out the web for grass-fed organic, free-range milk, meat, cheese, and eggs, especially if it is local. The greenhouse gases you are talking about are mainly caused by factory farms.
Organic means nothing 90 percent of the time. It's just a marketing label. Obviously there are some exceptions but they seem to be scarce. Organic or not, the environment is still ripped to shreds to provide feed for these billions of animals. Feed that could otherwise go to feed the poor. Cows are still farting and belching all the same, making animal agriculture, organic or not, the #1 cause of methane emmissions worldwide which is 20 times more potent than co2. Meat is not green.
I cooked my turkey this way this past thanksgiving and I have to tell you I have never tasted a better turkey ever! It was juicey, tender and full of taste. Thanks Chef Emeril.
