You can still get the red coins and the 100 coins in the same level. Collect the 8 red coins. Don't pick up the star till you found all 100 coins. Get The 100 coin star then go get the 8 red coin stars. Works better for me that way.

And yes you do need all 7 stars from each level, including all 15 Secret stars to equal up to 120 stars.
