for the walls of jericho just use your finisher when you are at the opponent's feet if hes down. and then use your right analog stick in any direction (it doesn't matter) to make pressure and make him tap

for normal submissions you have to look in the moveset where the superstar you want to know uses submissions and then it's the same: make your submission moves and pull the right analog stick in any direction.
