@toxicmoth This is the magic of Mario Paint Composer, you need to find ways to be able to do complex things. I have learned many tricks from many other composers.

By pace, I'm guessing you mean tempo. If you ever need to change tempo in a song, you can always just make a new file with a new tempo.

As for holding notes, you need to mess with the volume bars below the notes to get an "echoing" effect. I suggest you watch other vids to get more ideas. Good luck! ^_^
