  • @mike33721 Dashi is basically seaweed stock or some sort of stock like beef or chicken stock and about the mirin the alcohol content burns away so the flavour is still there hehe

  • @ashrocks87 stock is the "essence" of meat. Usually you can buy it in supermarket. Or if you want to make it yourself, you can boil some chicken (for chicken stock) or beef (for beef stock) for few hours (more than 3 hours i guess). That makes the chicken/beef becomes tasteless cos all the taste, protein, etc in the chicken/beef is now in the water you use to boil the chicken/beef. The purpose of doing this is to enhance the flavor of any food you put the stock in.

  • @ashrocks87 oh, after finish boiling, people throw away the "tasteless" chicken/beef cos it's no use anymore (no taste, no protein, etc).

  • @ashrocks87 The stock used in japanese recipes usually involves bonito flakes or kelp, not beef or chicken like in western cooking. for a simple stock, throw a handful of bonito flakes to a liter of hot but not boiling water. once all the flakes sink, strain the liquid and discard the bonito flakes. do not squeeze out excess liquid from the flakes. Mirin is basically a really sweet sake. use sugar if you can't find it.

    mirin is sweet rice wine

    often can be substituted with a 1:1 mixture of sake and sugar.

    sake or mirin really makes a difference in flavour.

    he is using dashi stock which is stock made with bonito flakes (fish) and kombu ( type of sea weed).

    Sake can be found in liquor stores, while mirin, kombu, bonito flakes can be found in asian supermarkets.

    If you find that the stock is hard to get then I'd just replace it with water and try the dashi next time.

    Without dashi, it is just tamagoyaki. You can include anything you like, e.g. salt, pepper, sugar, etc.

  • no ... Mirin (味醂 or みりん?) is an essential condiment used in Japanese cuisine, consisting of 40%50% sugar. It is a kind of rice wine similar to sake, but with a lower alcohol content—14%instead of 20%. There are three general types. The first is hon mirin ,which contains alcohol. The second is shio mirin, which contains alcohol as well as 1.5% salt to avoid alcohol tax. The third is shin mirin ,or mirin-fu chomiryo ,which contains less than 1% alcohol yet retains the same flavour.

  • It works ok with a round one. You just shape it at the end and edd the ends before you serve it. XD That's what I've done since I first made it when I was 11. I'm 20 now and my guests I serve it too never even notice.

  • Rice Wine. A slightly alcoholic and sweet liquid that is also a little thick: Imagine olive oil and you get the right idea.

    It is commonly replaced with Rice Vinegar (similar product minus alcohol and a little more sharp), which are also used a lot in Sushi dishes to flavour the rice after cooking.

    A cheap but not as effective replacement is to simply mix water with some sugar. But that is if you really cannot find/do not want any.

  • It's known as chalaza (chalazae is the plural). They're white stringy things that keep the yolk in place.
