Its funny! What we like to do in our family (we are Sicilian) is, take take over pasta, and with a bit of olive oil, fry the tomato pasta (usually spaghetti or zit) in the stove top so it gets fried up and crispy... it is so good, and it another experience altogether, let me tell you. I understand completely this whole leftover thing. We must all make enough for leftovers the next morning! :)

tempering is when you first heat the oil and put mustard and or jeera seeds to crackle. It adds flavor to the oil and hence the dish.
