Good thing I wasn't on wifi that day. Hits from starmen, mega 'shrooms, and mushrooms from me to enemies don't get counted too. I heard there are even a specific group that are creating custom courses.
The whole time on sunday, When I played online, I really didn't experience anything at all. Just normal battles. One match was really laggy, which kinda worried me because my router is right next to my wii, but everything else seemed fine. >_> odd.
and Battle 4 made me make my "wtf is this sh*t" face. I would've just sat there and did nothing.

I think it was just really really bad lag. You could see the others jumping around the map every few seconds and some of your/their attacks may not have registered.
Yesterday was definitely a weird MKWII day. I was doing coin runners at Scyscraper and it froze for ten minutes then we all disconnected! TEN MINUTES...
When I've been able to play Wi Fi at my cousin's house, I do encounter lag, but usually not as bad as this. Most of the time it's just either I run or bump into someone, and it doesn't count, or I wind up coming in second instead of first due to lag. I haven't seen it this bad. They'll probably need to shut it down for a bit so it can be fixed.

that's just strange. I think you're right about the red shell: it seems to not hit the person, rather, kinda just... linger behind the person.

This happens to me too sometimes. I mean, in the second match, how can Wario say "Yahoo!" and not get a point awarded at 4:05?!
The 4th match was just freaky, and I hope the opponent realizes that he didn't get beat, he got cheated.
Also, I think you made a mistake in the description of the third match.

hold the button you use to launch them.
Like on the wiimote+Nunchuck, you hold Z and let go whenever you need to launch it.

Nintendo will have to shut down (mk)wi-fi for a week, just like they did with the gts to fix it. Meh, I dont really know what goes on wi fi.
