I think you can, if you steam it just a little first so the loops tend to stay where they are, and you remove the elastic very carefully so as not to disturb the edge. Crocheting will secure that edge and make a nice finish.

I started making my son a scarf prior to watching this video. I didn't use any waste yarn when I started just the elastic thread. Will I still be able to finish the ends with single crochet?
