@kokimotousa you don't have to use ground lamb, you can use just ground beef. I always make my kefta with just ground beef, I'm not a big lamb person. im pretty sure its called koofte and traditionally its they use pure sheep meat with shredded potatoes mixed in wich gives a really crisp ouside and delicious moist inside
and they are also thinner and get eaten with a cooked tomato sauce

Sumac is a herb used mostly in irani/persian cusine. If u happen to live in a metropolitan city u can easily find it at persian grocery store. U may also try a middlle eastern grocer too.

for anyone looking for variations: the sumac is crucial. i don't use lamb because i don't care for it. as for the sauce, i use a yogurt/mint/garlic thingy.

Thanks Dede.. Took me forever to track down some 7spice and sumac, but I finally found em.. Made a few batches of this today and they were great. They definitely needed some kind of sauce though. I was going to make your Garlic Sauce, but I don't like the idea of using a raw egg in the mix... Do you have any other sauce recommendations that go well with these kababs? I'm thinking Tzatzki perhaps? I'll definitely try out some more of your recipes when I get some time.
I must share my lamb story with you. When I was 13 a farmer gave me baby lamb whose mother rejected him..i Raised him from a baby with a bottle (his name was Abraham)My father went on strike and my family lost their income. Mom said the farmer accidentally sold abraham with his sheep,, but we were eating LAHA-MISHWAY.(SPELLED WRONG) I finally put 2 and 2 together.. this was years ago never had lamb since LOL.. never name your lamb! (this dish is making me reconsider!)

nice recipe dede! I'll give it a shot and see whats it like...I usually have mine like this:
mix a pound of meat (half beef and half lamb) with one small grated onion, ¼ cup of flour, 1 teaspoon of salt, and ½ teaspoon of black pepper.
cook on the bbq for a few minutes and than top with sumagg. Try it, and let me know your feedback :)

This looks very good Dedemed. I typically make an Indian version of this, but we're doing "Greek Night" over at my friend's house, so I'm going to give your recipe a try instead.
Been looking for an excuse to use a bit of my sumac supply. It's delicious, but I just haven't integrated it into my every day cooking.
Will let you know how it turns out :).

for anyone looking for variations: the sumac is crucial. i don't use lamb because i don't care for it. as for the sauce, i use a yogurt/mint/garlic thingy.

You can add cumin or anything you want to the dish. 7 spices does have cumin in it :)

Thanks Dede.. Took me forever to track down some 7spice and sumac, but I finally found em.. Made a few batches of this today and they were great. They definitely needed some kind of sauce though. I was going to make your Garlic Sauce, but I don't like the idea of using a raw egg in the mix... Do you have any other sauce recommendations that go well with these kababs? I'm thinking Tzatzki perhaps? I'll definitely try out some more of your recipes when I get some time.

whats nice about it its dry and the meat is so flavoursome... have some grilled tomatos or greek yoghurt with it tastes good!

I must share my lamb story with you. When I was 13 a farmer gave me baby lamb whose mother rejected him..i Raised him from a baby with a bottle (his name was Abraham)My father went on strike and my family lost their income. Mom said the farmer accidentally sold abraham with his sheep,, but we were eating LAHA-MISHWAY.(SPELLED WRONG) I finally put 2 and 2 together.. this was years ago never had lamb since LOL.. never name your lamb! (this dish is making me reconsider!)

In this video I do use pita bread to make the sandwich. YOu can pretty much make the sandwich in any bread that you like :)
