  • Woow .... I should say .. Chef your video was real good video. Simple & Sensible. Also, I love your tip. Does the Guacamole stay green after placing the seed in there. For how long (approximately) do you think it would stay green.

  • Beautiful, except for the pickled jalapeños, not tasty, and not traditional. And no black pepper! Please-you are already putting hot chile in it. And finally, if it needs more liquid, add more lime, or lemon juice. That's the tang you want, AND citrus juice has nutritive value. Lemons are just as nice as limes in guacamole. A few choices  for spice- red chile crush/chile pequin/fresh jalapeno/fresh serrano/fresh roasted mild-hot green chile.

  • He forgot to mention that the number one consideration when making good guacamole is getting an avocado that is not too ripe and not under-ripe. This singular element is KEY to making good guacamole dip.

  • Oh greeeaaat, the perfect side dish for fajitas along with sour cream, salad and bean paste. I love to prepare my Guacamole with  tomatos, small red onion, a bit lime juice, some seasoning but I will taste it with few jalapenos.

  • @mrdude80 Wouldn't bother with that, just make sure you put in enough lime juice, and some plastic wrap pushed down on the surface in an airtight container.

  • I don't use jalapeños. Maybe a small green chile, but usually it's unnecessary. And I do use one small clove of garlic.

  • I like adding a little cumin (not ground) into the quacamole and then letting it chill for about 20 min. for all the flavors to marinade. It gives it a distinctive flavor, but good!

  • Made guacamole today for the first time - it had a great potential, except, the amount of juice from one lime was WAY too much. Lime taste overpowered everything. Next time I will use 1/4. Other than that, I think it's a fabulous recipe, and with a little practice will be just as great as in my favorit Mexican restaurant! Thank you, thank you!

    I am not 100% that it works or not. It's something that I was told years ago. Less O2 exposure and the lime juice will help it from browning as well....

  • @MadeofBlackIce a lady told me the trick in the store.....you have to squeeze them gently holding the top and the bottom...not the sides how most people or like me used to do. They have to be firm but not hard also the top tip where they used to be holding from the tree, don't have to be sunken in or moldy looking.....

    There are different theories for this. I just do it because...

  • When I make my guacamole I put in onion, diced tomatoes, cilantro, and mayonaise. The mayonaise really brings out the flavor of the guacamole! I then mix it until it has a smooth texture. Really good!

  • I've recently moved to the US and first sampled guacamole at a local Chipotle. Being ABC (Australian-born Chinese), I've not come across guacamole often, if ever. I'm currently addicted so much so that I bought a tub from whole foods and had it for breakfast, lunch, dinner and tomorrow's breakfast. This is the greatest food item ever and I feel deprived for not having met this beauty earlier on in my life!

  • Very nice recipe. I didn't have jalapenos so I used 3 tablespoons of salsa which had jalapenos. IMPROVISE! Here is a tip for some of you all who worried about it turning brown quickly. Extra lime or lemon on top helps but I put the guacamole in a Glad quart freezer bag and put it in the fridge. The recipe was perfect for about a quart. I pack it nicely even with 2 seeds and squeeze out the air when I lock in the seal. When I want just some guacamole, I take some out and then squeeze out the air.

  • @poolking01 The spelling is "cilantro," but it is probably called "corriander" in the UK if my cooking shows can be trusted. It is different from parsley, but parsley would be safe to use in this dish like it would be anywhere else.

    Hello. Cumin is a spice. In it's seed form it resembles the caraway seed. I use it in it's ground form to season many Mexican dishes.

  • Really good recipe. What I do with mine is Lime Juice, salt and pepper, green onion, 3 riped avocados, 1 or 2 riped tomatoes, about a small table spoon of sour cream (adds texture), and a little bit of salsa. However, ur recipe is awesome too!!!! Another thing I would like to tell you guys is that the lime juice (or lemon juice) prevent it from turning brown. But the seed in the serving dish works great too

  • I'm Mexican first generation born here and to make true guacamole you use milk. yes milk that's why its kinda on the light green side. if its for fluatas its just avocados milk and salt in the blender.

  • @cottondino It's best eaten fresh. If you're going to serve it the next day, be sure to add lots of lime juice.

  • @ChefTips Yup, I agree. You'd best prepare guacamole on the spot (and impress your mates!) If you can't, add extra citrus in there 'cause the acid helps prevent the avocado from oxidizing and looking like, uh, something less than palatable. ;)

  • I think this recipe is fine, but in Mexico the guacamole is done in a different way. We use chopped onions instead of green onions, and the jalapeños aren't pickled; they are fresh. Try it that way and I promise you that you will reach a better gaucamole.

    P.S. The seed of guacamole is not necessary for prevent oxidation (turn dark); it's better if you use more lime juice.

    If I cut a avocado in half and keep the seed in one half, it seems to take less time to brown than the half w/o the seed.

  • @ChefTips That's because the seed prevents the oxygen from hitting the avocado. No oxygen=no oxidation.

    check daily in about 2 days should be ready and ripe.

  • I love these, but here in Sweden avocado is very expensive and usually the ones sold are tiny ones from South Africa, and they're often not ripe when sold.

    I like to make guacamole but I never put cilantro in it unless it's just for myself, because almost no one here likes cilantro because it tastes identical to a common local stinkbug that ruins fruit.

    I too think it tastes exactly like stinkbug but I like it anyway.

    Good thing about this recipe: I got all ingredients except avo in my garden!

  • For a drier dip, you can drain your tomatos or allow them to sit on a paper towel to get the extra moisture out. I also like to use vidalla onion if I am in the mood for chunky. Nice video by the way. Thanks for sharing!

  • I tried guacamole for the first time ever today...(not homemade though, I ordered a dish along with my nachos @ Boston Pizza). I liked it, not so much for it's taste, but because it was something new that seemed so exotic. I knew the main ingredient is avacado, but I could've only guessed it contained mayo, Miracle Whip, or cream cheese. I never would have guessed tomatoes, peppers, & lime juice.

    What is an avacado anyway, a fruit or a veggie? Do they have a high fat content?

  • @Preying4War Avocados are technically a fruit, and they grow on trees. I believe they do have some fat, but it's good fat!
