@bwcjjr1 Short grain and long grain rice have different texture and flavour. If I don't wash my Japanese short grain rice then the rice boils over the pot. I think it has to do with the starch coating forming bubbles. Also, if I don't wash my rice, it comes out more sticky and lumpy instead of fluffy. It is as if the starch formed a glue.
How do you boil/steam your rice after washing it using this method? Do you keep it simmering while it cooks, or do you turn off the heat from your stove while it cooks?
Rice rinsed water can also be used to boil daikon, white radish and takenoko, bamboo shoots. It helps to tenderize tough vegetables and removes excess wild flavour called aku of bamboo shoots while boiling the root vegetables.

my family rinses rice with tap water until almost all the white stuff is out and then use drinking water 2 times.
