Ghee is nothing but the fat of the butter isolated, all water, proteins are removed & then it lasts longer. Increases the shelf life without adding preservatives. The butter is to be heated to remove all water, the color depends on the extent to which you cook it, if the residue is colored, which it shouldn't be, dry, yes, colored, no, that's burnt.
@medicjimr It partially solidifies at 80*F, so it looks like like a pale yellow. I have read that it is normal to do that, so I am not concerned. When you taste it, it is really light tasting and no greasy residue on your fingers. I like that.
I seem to have gotten my ghee a little browner on the golden-brown scale, but it does not smell, nor taste, burnt. From what I can find out, it is fine. If it is a lighter golden-brown, that is ideal, it seems.
Walmart has it for about $5 I saw it in the international food section. and looks like I did a failure it looks like the measuring cup looks like back to the kitchen again
the second method , say its used motor oil, so it wont handle as much heat,time. If you wanted to increase your smoke point you can mix the ghee with some olive oil,if you were'nt on that diet. Try adding spices to flavor the butter, in india they add cumin, and other spices.

I am curious about the used motor oil reference, and not handling as much heat, since that is what ghee is supposed to do.

@medicjimr if it is for $5 at walmart, it is probably motor oil labled as ghee...that's what they do to keep the prices down & their own profits up.
