For a roux, all purpose flour is what i use. Also, try to use either a whisk or a flat ended wooden spoon so that you can evenly move the flour around. Key element is to use equal amounts of butter and flour and add gradually. add alittle flour in the melted butter and stir until all lumps removed. then, add more flour.

@ mikestroke1 try simmering the milk with onion pk before adding the white roux. then add the spices. add gruyer and cheddar cheese. =)

Yes - I do heat the milk in the microwave 1.5 to 2 minutes. or heat on the stove on low. --Beryl :-)

Hmm...We'll get to the bottom of this...Are you using all-purpose flour, and not "self-rising" flour? (All purpose flour is what we use.)

You would just leave it in the oven a little longer, or set your oven to "broil", until it got the browning that you wanted.
