  • @ mikestroke1 try simmering the milk with onion pk before adding the white roux. then add the spices. add gruyer and cheddar cheese. =)

  • Yes, I am using regular all purpose flour. Should the milk be heated up? It seems whenever I add the liquid to the flour and butter, it clumps up. I'm starting to think it's the temp of my milk.

  • Yes - I do heat the milk in the microwave 1.5 to 2 minutes. or heat on the stove on low. --Beryl :-)

  • Hmm...We'll get to the bottom of this...Are you using all-purpose flour, and not "self-rising" flour? (All purpose flour is what we use.)

  • This looks so good!! I am starving now!! Except everytime I try to make gravy for potatoes, or when I tried to make a rou, all I got was clumps of flour. I need to figure out the rou recipe so I can make this great looking mac n cheese!!

  • For a roux, all purpose flour is what i use. Also, try to use either a whisk or a flat ended wooden spoon so that you can evenly move the flour around. Key element is to use equal amounts of butter and flour and add gradually. add alittle flour in the melted butter and stir until all lumps removed. then, add more flour.

  • MMMmmmmm, that looks good. I've been making the cassarole version of mac n cheese for years with egg and sour cream, this looks a lot easier and cheaper can't wait to try it.

    Do you know how to make the mac&cheese so that it scorches on top just right? Kind of a golden brown on top?

  • You would just leave it in the oven a little longer, or set your oven to "broil", until it got the browning that you wanted.

  • Cajun and creole are very similar. Most people outside of Louisiana would not know the difference. I am a Cajun. Cajun cooking is more Louisiana country cooking and Creole cooking is more city or New Orleans style cooking.
