  • @mistershobie Its not the sauce actually. Its the sufficient amount of microfoam that allows the sauce to stay on top and not sink. Try having a thinner layer of microfoam and it''ll start sinking..

  • @mistershobie it's not about how thick the sauce is, you have to steam the milk just right so that there's enough foam that can support the weight of the chocolate. You don't want to make it too foamy though, that would ruin the mocha
