its actually not neseccary to make the HITE! noise. its better to ssssss it out because 1) it doesnt sound as gay and 2) when u push the air out a bit slower u dont get winded as fast.

yelling in martial arts is all about exertion of energy usually channel through breath.

Now in film reasons I can name 2.

1. it helps keep rhythm through the moves which is important in choreography. in a way you can think of the noises like musical notes.

2. Acting... makes the character's feel most more fierce when attacking. Much more angry appearing.
