In my many years of research one of the things I have learned is that you have to grind up flax seed in order to reap the nutritional benefits. Seeds go in, seeds come out. :)

Yeah - peanuts do contain a lot of fat - but this way there are no addatives and no hydrogenated oils. The sugar adds to the consistancy in my opinion, even more than the 'flavor'.

Hi Donna. Thanks for your kind reply. I'm actually switching from SmartBalance Peanut Butter to Stop & Shop Natural PB ($2.29) and back to Trader Joe's Natural PB ($1.79). The main reason is that these are cheaper. Initially, I switched to these because I was worried about the "palm fruit oil" in the SmartBalance ingredients. I have now since learned that palm fruit oil is entirely different from palm oil. SmartBalance addresses this on their website FAQ.
I've not checked the ratio, but I use 9 drops in my coffee and it takes two packets to get it as sweet as the 9 drops do...so...I'd say start with 3 packets. It should work.

I keep meaning to buy stevia but its so pricey for a little bottle and i never see it go on sale. I'll make the splurge one day but i love my grocery bill coming out to $30 a week. Feels so good. :)
We have NOT stored it in the fridge. It doesn't seem to separate like the 'natural' store bought - and since we never stored peanuts in the fridge, I figured this was fine in the pantry just like them. So little ingredients in there. BUT we DO go through it pretty quick around here - so if it is going to last more than 2 weeks, it wouldn't hurt....but it will be harder to spread.

How many cups of peanuts did you use? Could we use wheat germ in place of the flax?

I think you could try wheat germ...but it may make it kind of dry. Give it a little test though.
I eyeball the peanuts every time....It's close to 2 cups.
Let me know if you try wheat germ and how you like it. I'd cut the amount in half at first though....but that's just me.

@16hilltyKMS ~ Yes the stevia is optional. We just use it to keep the sugar down but still have sweet PB.
You could toy with the sugar amount and see what you like. Honey *can* work but it gives it more of a spun-sugar type consistency.

I use a liquid Stevia extract that I purchase on line at puritans pride.
In my opinoin it is the best tasting stevia with no overpowering flavor other than sweet like sugar.
no calories and natural - yay!

(sorry, I've been pre-occupied with my mom in the hospital, so I'm late on repies, all is well though).
I bet you might like the taste of this PB though it is a bit different, but fresher.
I get stevia at puritans pride (the liquid extract) and it last FOR THE LONGEST TIME cuz you only use a few drops at a time.
