I had the same problem the first time I tried this. I found that medium heat doesn't cut it with my stove. Turn up the heat and make sure it starts boiling (large bubbles come up). It should then start to thicken up as the water evaporates away. The longer you "reduce" it, the thicker the sauce will become.
Perviously, I had never cared much for salmon, but I decided to cook this dish for my wife, who loves fish. What can I say? I loved it! As we both like hot seasoning I added a bit more of the Sambal paste than was perhaps necessary, but the results were spectacular! Persons trying this recipe should be warned about the true heat of the Sambal, but also to accept no substitutes! The flavor when mixed with the brown sugan and ginger is wonderful!
hmm 5 mins if panic sourcream/horseradish and spring onion in a bowl and mix well its cold sauce but match grilled salamon perfect i think :).....but your looks better so im gone try it next time

Chef John, i think you can substitute basil leaves with limes. Squeeze the lime on top of the grilled salmon. Or probably you can use lemon.
Because my family sometimes use the cooked sambal sauce, pour it on top of a grilled fish and squeeze lime on top of it. Anyway, thanks to you, I would probably suggest to my family to use basil leaves with sambal and see how it goes =).
I'm being serious; Spam is actually good and it is huge in Hawaii. When I was there last year it was even on the menu for not only local diners but McDonald's. Spam and rice is huge and its actually good if you prepare it correctly.
Please experiment with this and bring us some ideas :)
@LeviathAileron Yes, Spam is incredibly popular here in Hawaii and I think it tastes really good in small amounts. I say small amounts, because otherwise the fat and salt will overwhelm eventually and gross you out, kinda like how cinnabons become too cloying. Pan fried, it develops a wonderfully crisp, brown crust on the outside. On a spam-musubi, it absorbs the sweet teriyaki sauce really well and counters that sweetness with its saltiness, with the rice as a neutral support.
@hawaiidispenser i love spam and use it as a mixer a lot. Me and my friend Brandon pioneered the "midnight bbq" in my circle of friends and we bbq the spam and glaze with katsu while cooking. We take a few slices and chop it finely and stir into a big pot of shells and white cheddar pasta. This may be the best way to eat spam EVER. try it, you wont regret it.

Like the way you took an old classic and made it a bit fresher and funnier. I remeber you uploaded a similar recipe back in October '08, but then you cooked the salmon in the sauce. This will allow us to make the sauce seperate, and use it for other dishes as well. Great job!

Our basil plants that we had literally melted in the ground because of the Florida heat... ALL of my plants melted!! even the tarragon. :( this happened even though the whole garden was watered every day!

Have made this dish twice for my wife and I...wonderfull!
The sambal also adds a wondefull heat to my spaghetti sauce.

Not noramally a big fan of salmon but I may just have to try this recipe because it does look good. Thanks for posting this, Chef John! Always look forward to your vids & hope that Food Network picks you up for a show soon. They're fools not to have discovered you by now!

@fmfad It's fishy lol. I mean, can't really give much of a better explanation then that. You should just try it, you'll really only know then if you like it.

Our basil plants that we had literally melted in the ground because of the Florida heat... ALL of my plants melted!! even the tarragon. :( this happened even though the whole garden was watered every day!
My food wish is for a cold, Mediterranean, tzatziki - style soup to combat the hot summer days. : )
Thank you for all your videos and recipes... every time i see one of your videos in my sup menu, i go get some popcorn because i know im going to be entertained. :)
