why not completely cool the wort with the wort chiller? part wort chiller, then ice water bath? seems a bit odd. Also, I always thought Santa brewed beer in the summer during his off season. Another thing about conversion is that after starches have been converted to sucrose, there are still a lot of long chained sugars which need to be broken down by the beta amylase enzymes to create more simple sugars.

Next session, please don't worry so much about some "10 minutes after mash-in" to get to some temperature.
As for conversion, you don't have to worry about that (unless you're using grains of unknown quality .. but that's rare), so just set'n'forget for 60-90 minutes.
