  • How I eat soba : put in the spring onions (green onions, welsh onions) into the sauce, then I add a small egg yolk in it, mix well then I add the noodles into the sauce mix it again then eat XD

  • I could buy kombu kelp in my country but it's too expensive since it's imported from japan.

  • It seems like you always really enjoy your meal, you don't eat too fast, you taste each part of it, you take your time to enjoy it ! Maybe it's the reason I almost never see fat japanese people .. and why you can live until really old ! In my country most of the people eat because we just have to :( It doesnt have to be healthy or we have to eat really quickly ...I'd really like to eat this tasty and healthy food ^_^'

  • @argalax @xomgitsanasianx i'm guessing one/both of you muslim? i run into that conflict myself, so just leave out the sake, and replace the mirin with some light syrup if you have to. i make everything without those, and they taste fine. of course, i wouldn't know if that's alright, since i've never had it with the alcoholic ingredients. still..

  • @xomgitsanasianx A LOt of asian grocery stores have MIRIN STYLE sweet seasoning. it's not real mirin, since it doesnt have alcohol but it's similar in taste. as for sake, just leave it out even though the alcohol component goes away after cooking....you're not drinking alcohol when you cook with it..

  • @beanabear2214 it taste awesome. if you mean just the noodles though? then they're fine. I just have to have something to go with it(like the mentsuyu) the english name for the noodles is buckwheat noodles. :)

  • @diayang Substitute sherry or a mixture of 1/4 vinegar, 1/4 cup water, and 1 tablespoon sugar for the mirin. As for kelp...not really, but your local organic market will probably have it.

  • @diayang You should be able to find it at any normal liquor store. If not, rice vinegar or the mirin substitute without the sugar should work.

    you don't have to use sake.(some another recipe don't use sake)

  • Oishiso----!! I make Mentsuyu by myself too because it's expensive to buy one that comes in a bottle here... I use Dashi powder instead of dried seaweed or bonito flakes though because Dashi powder is not so expensive.

  • Yummy! tempura and soba are going so well together. I am craving for this now:) Sometimes I make mentsuyu at home and I think the secret to make it taste sweet and delicious is to cool down/refridgerate the sauce well before serving.

    p.s. what did you do with the tempura flakes?

    I just removed them and threw them away. You can keep them to use for tanuki onigiri as agedama :)

    i think カボチャ should be translated as a Butternut Squash or squash. かぼちゃ is usually sold as a Butternut squash, i think.
