If you want a truly killer crust, you can try the recipe in Reinhart's artisan bread book. You do basically the same things as here, except you let the dough sit in the fridge overnight instead of rising in such a short time. The longer rise time lets the dough develop more flavor. (I have never made pizza, but I've made bread using the overnight technique, and not using it, many times, and it really has made a big difference). Love your work, btw! Your chicken chili's fed me many weeks! lol
I think your water was too hot 'cause the yeast should've foamed up on the surface of the water after 10 min. of resting. Also, it's best to add salt AFTER adding flour because salt can hinder yeast from doing its thing.
We moved to an area 3 years ago that had NASTY PIZZA so I experimented with about 5 dozen pizzas over two years. DANG that was a long time. I've mastered it, though!~ Drizzle with olive oil on top before baking & sprinkle herbs, too! That cornmeal makes a huge difference!

Cut your potatoes into frie shape,place them in a bowl with cold water,heat oil for frying them,Place your fries on a towel and dry them,once they are dry put them in the oil and let them cook only about 2 mins,take them out, drain the grease and let them cool,once they are cooled lay them on a baking sheet seperate them and freeze them for about 30mins,take them out and put them ina freezer bag

How ironic... I made homemade pizza for dinner tonight, for my family, with 100% whole wheat flour. I never thought about freezing it though. Great idea. I think I will try this with the leftover pizza dough.
