Naturally, wanting to be a good wife; I learned to make Mexican dishes so he's not stuck eating Filipino food all week. However the fact that you have to put "(Married to a Mexican)" in the title of most of your recipe videos struck me as kind of strange... almost apologetic. In fact, you look like you could be Mexican yourself. Good food never needs explaining. Just sayin....

I like to roll out the dough thick (or pat) then put diced jalapeno and diced sharp cheddar then roll it back with seam on the side top. Oh yeah a little jalapeno juice is good in the dough mix...Esta muy rico...

Those are not aunthentic Mexican bolillos, but they don't look bad either. You do good but still you might want to get your recipies from more central Mexico like D.F, Puebla, or Toluca. You still do not make real Mexican.

There is a Mexican bakery here in my town that sells rolls that look like this. They have cream cheese and a jalepeno inside. They are the best rolls I ever had. The people at the bakery are fantastic, really nice folks. But I don't speak Spanish so the language barrier prevents me from asking about their fabulous rolls. Is this the same bread recipe used for that? I hope so!
no, is not the same bread. bolillo is like.....baguete bread but very soft, really nice with butter, for a sandwish/torta, or topped with beans and cheese. the bread you mention (i guess is similar dough), but because of the cheese is not nearly as fluffy and softh bread filled.
