Those are the biggest oysters I've ever seen! I've only had oysters on one occasion and they were OK. I can't wait to try more. These looked pretty delicious.
The test of a really great fried oyster is that when you first bite into one, it explodes in your face and bathes you in succulent oyster juicy goodness! (Check out Jack's Place at Seattle's Pike Street Market if you don't believe me)...so, how do these compare after smoking? As you said, you can not overcook an oyster or it's ruined. But I love smoking with hickory, and these looked great!!

Those look great! Can't stand raw oysters, but these look like I will have to try them. do they taste anything like clams when deep fried like that?
