Yup, If you unmount or get knocked off your mount someone can come up and steal it, same with boats.

Depends how they implement them. If you can build a home anywhere, then finding a very secluded spot to construct it wouldn't be that dumb. I suppose it depends on what their uses are, and how many resources it takes to construct them.
