  • Great videos Rhio, I would love it if you uploaded some more! I have your book, hooked on raw, I absolutely love it, the recipes I've tried so far have all been really nice and my meat eating hubby enjoys eating the food too. I haven't tried making any fermented foods yet but can't wait to give yogurt and cheese a try. Keep up the good work!

    For your hubby, try the Neat Loaf, I've been told it tastes like meat loaf.

  • @RhiosRawEnergy Thanks Rhio, I definitely will. His favourite recipe so far is the avocado dressing, the one with almonds in it. Mine is a toss up between the mango pie (made this for christmas in Australia so the mangoes were in season and yum) and the spinach cesar salad which is like almost an everyday staple for me :-) but I haven't had the book long so I still have a lot of recipes to try!

  • @JonDemo Hi Jon, Everybody has different tastes, so this might not appeal to you... but yogurt has been popular for centuries around the world. Admittedly nut yogurts are a new idea... but based on the ancient fermentation methods.

    You could only get sick from it if some of the wrong bacteria got in, but I have been making this for years & that has never happened. However, for extra insurance, people could stir in some probiotics and then they would know they have the right culture

    Hi Rawaiian, I usually scoop out the yogurt from the top and don't mix it with the whey. But, if you are wanting to make a smoothie or shake, then you can mix them together, add in some fruit and whatever else and enjoy it that way. Some people also like the tartness of the whey on its own...

  • @Tornerose83 Before I found the farmer where I buy my raw almonds direct, I was purchasing almonds that were imported from Italy & I found that those popped too after soaking... so I don't know if they are being treated in some way when they come into the country. They were marked "raw" but they were not.

    I do not know what the situation is in Spain. You need to ask some questions where you purchase and/or write to the company in Spain and just ask them. Hopefully they will tell you the truth

    If the skin pops off after soaking overnight, then I'm afraid you do not have "raw" almonds. I have been working with raw almonds for a long time, and they never pop after soaking. You can peel them, but it is tedious. By law, since 2009, all US almonds are either pasteurized or treated with a toxic fumigant, propylene oxide, and they are still allowed to call them raw. What deceitfulness!! One exception, you can buy raw almonds from the farmer direct or farmer's market.

    It keeps for approx. 3-5 days in the refrigerator.

  • After you strain the pulp from the milk... that is the point to add the yogurt culture stirring it into the milk. In the refrigerated section of some health food stores, you can find yogurt culture. Or you can send for some Kefir culture (as far as I can tell it's the same thing) from Lifeway Foods in Morton Grove, IL and their number is 877.281.3874.

  • I have a question. When you make the yogurt, can you add a culture so that it gets thick like a real yogurt? If so, where can you get this starter from? Thanks!

  • (continued) There are also Kefir grains (that is the original Kefir grains, NOT powdered) and these last forever and keep growing and you can break off pieces to give to friends. The only thing is with the Kefir grains, you have to store them in whole milk between using them, otherwise they die off.

  • That is a good question. I have only made it with peeled almonds, but now you've got me curious and I will try with unpeeled to see what the difference is. Thank you.

  • I made the yogurt with soaked but unpeeled almonds and the yogurt comes out a pale tan color, and the flavor is not as mild. It's still good, but I like the milder taste when using the peeled almonds. I would say try it both ways and decide which one suits you better.

  • Does raw Kombu Tea (Kombucha) also give similar pro biotic benefits ?

  • Yes it does provide probiotics. I used to make Kombucha, but I personally don't like to make it because of the use of white sugar. They say it is an ancient practice, the making of Kombucha, so my question is: What did the ancients use instead of white sugar? I might be more willing to make it if I knew what they used. That being said, the white sugar of course, is all used up (digested) in the final product, when properly made. With blessings, Rhio

  • How do you get the almonds peeled?

  • Use my 7-second blanching method. 1) Prepare a bowl of cold water with ice in it. 2) Boil some other water, turn off the flame. 3) Put the almonds in and stir for 7 seconds. Stay with the pot & time it. 4) After 7 seconds, quickly strain the almonds through a strainer and then plunge into the icy water to stop the process of cooking. 5) Pop the skins off between your thumb and forefinger.

If coming to Long Island I still have to show you my personal training studio and Raw Licensed Kitchen - two locations a mile apart. I have been working 16 hour days providing a complete raw food plan for those who want to experience health! It seems like I am working a million hours a week- that is why I have not stayed in touch! So far people love the food (it sells out but it is a lot of work! )

  • What exactly is a muslim bag? Can I use cheesecloth or a sprouting bag instead? Do you know of a good supplier for these type of bags?

  • ok, sounds great -- but what do you do with the whey? :-) Oh & now that almonds are more difficult to find truly raw will this affect the outcome of the yogurt? ~~Blessings, Kelly

  • Kelly, you can drink the whey. Some people like it's tangy flavor and others put it into a smoothie. The fact that almonds are cooked, irradiated and/or fumigated now does not affect the outcome of the yogurt. It will still look and taste like Almond Yogurt. But it won't be as nutritious and it will only be partially raw. The raw part being the enzymes and ferments that grow in the almond milk in the process of becoming yogurt. We do need to reclaim our raw almonds by becoming activists. Rhio

  • Rhio is so adorable. She gave an amazing presentation at the rae spirit festival last year, and I often recall her beautiful singing voice. I hope to see her at RSF 08. I thought making raw yogurt would be more complicated. I never made it or had the desire to, but after watching, I am eager to try. It looks really yummy and easy. Thanks for posting!
