One of the major differences here is the instructor is giving his shoulder to the opponent rather than squaring on. Wing Chun always fights facing the point of contact and the target for structure and equal use of all limbs.

The fencing he took the timing for the non-telegraphic punch, the footwork, and turning more sideways. Although I don't believe he typically turns completely sideways cause he still likes using both hands. It's more of a distance thing when sideways.
