I really enjoyed your video. I had bought everything to make a seafood paella and was looking for a video to remind me how to. I was born in Spain and wanted something that tasted like home. I came across your video by pure luck. I made the paella while following your video. Needless to say it was a hit, no left overs unfortunately. Thank you for writing back I was interested in hearing from you. tomorrow I will make one and I already have a ton of items, cut and ready. I am using both meats and seafood and spanish chorizo, but the real safron is hard to find so I am using a goya powder seasoning which contains saffron and is for paella. at my church we have a study group of six people and I am cooking it. I had to go to Tijuana, mexico to buy a big paellero it was only $25 so again thank so much
I am confused as to the order of cooking the different items, does it matter? because I have seen videos where they fry the rice first or the chicken first and the liquid is added before the rice when all items are boiling ? your video is great and the music excellent. also you did not add sausage(chorizo) or pork meat, is your recipe from Spain.? thank you so much
Well to be honest I don't think it really matters which order they go in- everyone I know does it differently. Paella can be made with either fish/seafood or meat but mine was the fish and seafood one. And yes it is from Spain. I'm 1/2 Spanish from Seville and my uncle cooks it really well :) Thanks for commenting :)

@mariafrogley .....adding rice so late in the process will only overcook your seafood.... and with that your paella will have very hard and small pieces of seafood....

Well for every one small coffe cup of rice, you put three of stock. :)

Tip - use a cheese grater to grate garlic - it brings out the flavour and makes life a lot easier.

I'm glad you liked it!
1. You can't put the cooked prawns and raw prawns together because the raw prawns take longer to cook than the cooked ones.
2. You can buy the fish stock as little cubes which you add to boiling water oryou could put the raw prawns in boiling water and use that.
