    The mixture of sugar, tea, room temperature, and yeast/bacteria provides an ideal breeding ground for many micro-organisms (some pathogenic) and airborne fungi.

  • It it gets moldy (fungus), it's bad and you should discard it. A mature komucha is mold resistant.

  • I made the mushroom by mixing the sweet tea with a bottle of raw kombucha. After 3-4 weeks the mushroom had formed. In the beginning I couldn't tell if it was the actual mushroom or just mold but now my mushroom is thick and white like in pictures.

  • Good Job on the video.. Its cook to know that there are others out there making this since its SO good for the body. I've been teaching classes on how to make probiotic foods. Its fun to flavor the drink after the kombucha tea is made as well. Thanks for the video !!

  • There must be a way to produce them when they did not have the cultures availible.

  • Not real easy to do that.. some things like Friendship bread can be started with just yeast but there are as many as 20 different bacteria and yeast cultures found in the kombucha. Trying to develop the right symbiotic relationship to produce the mushroom would probably take more time than you want to devote to it.. I'd order one online through ebay or from a reputable vendor. Google Kombucha Source.. its usually cheap!

  • There must be a way to do this without commercial kombucha.

  • The only other way I know is to get a buddy to send you one. I'm not currently brewing, but an ad on craigslist will probably root one up.

  • dont use tea bags, use fresh tea. Use organic sugar. How do you make a culture if you dont have a kombucha culture to start a fresh batch off. I lost my culture due to neglect and mold, and have to start a new one. How do i do this without the cultures

  • If you buy a bottle of commercial kombucha tea, you can mix it with an equal amount of sweet tea and let it form a new mushroom. Takes about four weeks.

  • Just fyi- if you add a bit of brown sugar, you can have your kombucha in as little as 1 week rather than 2-3

  • hi, must say i never heard of kombucha before but i did some research on it and in russia, this is known as "tea - kvass", or mushroom tea as well. However, kvass is a bread drink that is also popular in russia and other parts of eastern europe. great video, maybe you could make a video on how to make KVAS, its simple just look up the recipe on google or something and maybe make a video about it. Good luck with the next videos you make!

  • Hey David nice vid, thank you,I brew Kefir but have ordered a mother culture of Kombucha,Im curious if the mother culture that you put in a seperate mason jar was also filled with the sugar/tea mix or just left alone?, if it was left do you ever feed it again?, thanks!!

  • I preserve the extra 'shroom in a little bit strong kombucha vinegar. I keep one or two extra handy, in case my brew goes bad. Every time you brew a pot, you get another one, so you've got plenty to give to friends or add to the compost heap.

  • Sure! Use a bottle of the live commercial tea. Combine it with an equal amount of sweet black tea in a quart jar. Cover the top of the jar with a cloth and leave it alone for a month. A scoby will form at the top. Takes a while, but it's an easy way to get a scoby. Hope that helps!

  • Great video, thanks! I'm just starting a culture from scratch (i.e. from a bottle of kombucha tea) and I really needed to hear that part about the vinegar though. I've been all too often tempted to mess around with the baby and clean out the dead parts when it really just needed to grow big enough to protect itself.

    FYI Kombu actually means a kind of kelp.

  • Don't suppose it's musroom kelp? :-)

    I originally got my scoby from a bottle of commercial tea. Mixed it half/half with fresh tea and left it in a covered jar for a month.

  • I think that once you've boiled the water, the only difference between distilled and tap water would be the trace minerals.

    Of course, I'm far from an expert, but I believe that mold is most likely to form if there's not enough starter in mix. I've played it on the safe side and put in almost two cups of strong mature kombucha as a starter for a gallon of tea.

I am going to try sending it to friends with whom I want to share some babies and you've spelled it out so well here...the only thing I would add is to let the tea cool down to just warm or room temp.before adding to the kombucha starter muchroom.Again..what a great job!! thank you- Shelley
