I had the same problem. Sometimes the game glitches out on this achievement apperantly. I got my vehicle destroyed on purpose and resummoned the Deuce and did it again. It worked for me that time.

You just hold down your gitaur attack button until the explosion blastes off the straps.

Every ten you set free you get a little more durability from attacks.

Dont know why, but it took me a whole playthrough to figure it out, myself. XD

i got this by racing that weird green fella and some point in the race i fell down the whole in teh bridge you rebild and it fell for a while but i didnt die while fallng i landed on a rock at teh bottom of the cliff and then i got the achievment but then i died coz it was the only way to get out

If your deuce is fully upgraded you can get this on the ramp that's at the end of the highway towards Lionwhite's palace. You have to boost into the ramp, then just before you land boost again for another second or so of airtime. It's tricky to pull off, but if you get your timing right it works.
