What is the best way to make a crust for a custard pie,that won't get soggy?I've heard of using oil,shortening and/or butter.I've even come across recipis that use egg in the pie dough, what does this do to the pie?
I make it a point to blind bake the crust on the bottom rack of the oven. The heat gets a chance to thoroughly bake and harden the crust, making it less likely to get soggy after the custard sets in. Shortening is best for a flakier crust that holds its shape well, but some ppl are put off by the aftertaste of shortening. Butter has a higher water content which doesn't hold the shape of the pastry as well, but it adds better flavor and richness.
I use a combo of both butter and shortening; never tried making an oil crust but by the looks of it, it seems harder to roll out. Probably best to "smush" it in the pan. Egg acts as a glue to make a crust that won't crumble apart when slicing out a piece of pie. If you add egg, you'll need less water which makes a tougher pie crust.

I am making this right now, I hope it turns out :) I made a double batch (2pies) and put toasted coconut on top so we will see how it goes:)

Pre-bake or blind baking is a good idea because it makes the crust flaky, crustier, and less soggy. Makes a big difference!
