What's the difference if you create the crust on the presentation side (flesh side) first or second, regarding release from the grill? Cooking it on one side or the other first has nothing to do with the fish sticking to the grill or not. Notice they never actually pull the fish off the grill and cut into it to show you the result.
@silvermediastudio Cook skin side first, because it'll allow heat to get through the meat evenly (as opposed to overcooking the top portion of the flesh while the center stays raw). Then turn and finish on the flesh side to create the presentation you want.
that crust is also what overcooked your salmon. when a fatty fish like salmon in done on 1 side, it will release from the grill with just a little gentle effort. overcooked salmon is dry and falls apart as oppesed to flaking apart when properly grilled
Or, you could get some cedar planks and do it the right way.

should be the other way around....cook more on crust...protects the fish...more juicy...and nice crust on skin therefore it wont stick...
