@Zergboyzzz I always assumed the Reapers where sentient beings who use the Milky Way like a farm. They come back every 50,000 years to harvest the lifeforms to reproduce, i.e. the grey pulp your crew turns into. I also think that's what Eezo is. In ME2 its always found on planets that had civilizations. Its used in ship FTL drives and Mass Relays. Just like how Oil is the byproduct of dead lifeforms, only Reapers know how to harvest it and are dependent on it to survive.

The reapers were only taking humans because harbinger noticed shepard being a badass and was like "Hey guys, I think a new human reaper would be totaly badass. As all the other life forms in the galaxy have DNA of Levo-amino acids and Turians together with Quarians are the only known species that have DNA of Dextro-amino acids, Reapers have probably significantly harder task to mold them to a new form, unlike humans. As protheans were molded to collectors, it seems that cultural and technological achievements or lack of them are irrelevant to the reapers, so long as they can be used.
