just came back from a Moscow-Irkutsk (Baikal-lake)-Ulanbaatar-Beijing-Shanghai-Hongkong Trip
and now im missing the sound of the train and our beloved compartment 7 on the way to irkutsk... it was our home for 4 days
if u want to see some real adventure dont book the tourist-trains ... just book the lower class trains ... we were the only tourists in our train and it was funny to see russians wondering why we travel through russia without speaking russian xD
I have a few questions: If you don't book an organised trip, are you sure there will be enough tickets available once you arrive in moskou? Also i read something about a paper where you need to fill in where you are going to spend the night And, is it a problem if you almost don't speak any russian? Hope you want to answer these questions :)
We booked at a agency, so I am afraid I can't help you. But I think you should book your tickets in advance to make sure you can get on the train to prevent you have to wait a couple of days ;-)

We didn't have any problems with communicate with Russians. Just use your hands and feet, use a dictionary and learn the cyrillic writing. tip: google "point it boek"

One of our highlights was cycling in Beijing, Gobi Desert (can be very hot or in our case: very cold...). Don't book any tours, just read the Lonely Planet and go with the flow!

I checked our bill but I think we spend about € 3500 pp. You can travel from Moscow to China in about 6 days depending which rail you take.
Ticket Amsterdam-Moscow and Beijing-Amsterdam and railticket cost about €1350,-
2 days at Lake Baikal and Irkoetsk: €300,-
3 days resort in Mongolia: € 150
7 days Gobi dessert: €480
3 days hotel + trips Beijing: €180
Taxes: €260
Total: € 2720
