You can put may be little beasn if you like ,too much beasn will be too sticky to roll it. Kasuri methi is also very good but it is dried so it is very handy to use it. Fresh vegetables do have little more vitamins than dried ones. Any kind of green leaves can be used like spinach.

Thepla is good for at least 3-4 days.
That is why dough was kneaded with yogurt.
