GSP isn't fat, and he hits pretty good. But he isn't "over built" either. Too much muscle can indeed slow people down, because muscle consumes more oxygen. Did you see how fast Brock Lesnar gased, or how about Shane Carwin in his fight against Brock? I have seen it time and time again, and I"m just calling it as I see it. "Too much" dense muscle can cause a fighter to tire more quickly in MMA where there is a lot of movement. Though, of course, genetics are an exception (GSP, etc)
