my Tuscan mother in law made the most wonderful spaghetti frittata, but italians are funny about left-over pasta so she always made it fresh. Grated Pecorino, provolo, salame, egg, olive oil and pasta, heaven. Thanks for reminding me of that. xx

I usually reheat pasta in a skillet with some olive oil and a bit of Parmesan cheese and that's delicious. I'll have to try the egg. I also like to add left over pasta to my favorite omelette recipes to make frittatas. Now that's a great breakfast too just not as crispy
