  • Do you ever can your tomatoes using the water-bath method?

  • @MyFreedomChannel I don't use the water-bath method because I don't have a water bath caner. You can do both low and high acid foods in a pressure caner and that's all I have.

    So most of your fruits you can use a water bath caner, but you have to use a pressure caner to can vegetables and meats.

  • That's fine - I was just curious. I deleted my first reply because I didn't pay close attention to yours. You are correct. Although my grandparents used a water-bath method for many years without any problems w/food poisoning, However, it is much safer to use pressure can method for non-acid foods. We never canned our meats - always froze them very well in a deep freezer in special paper; our meats lasted at least one year w/o any problems.

  • FYI you need not pressure can acidic things like tomatoes. I usually just boil the fruit in the jars with lids on loosely then tighten up while very hot right from the boiling water. Just put the fruit in jar with 1 tsp salt, maybe fruit fresh. You only have to boil them for approx. 15 min. (you may put in any seasoning in you wish) Also you may puree tomatoes then cook down some then can in the bath method mentioned above. Hope this is helpfulJDB

  • I have beautiful big sweet tomatoes thanks to my husband he is a wonderful green thumb.  The black spot in the bottom of the tomato is caused by an uneven quantity of water, it needs to be water with the same amount of water everyday... There is a good video about the tomatoes diseases in you tube, look for it... thanks for the video
