The main point of Genesis chapter 1 is to show that all things on are created by God. Since it is evident that dinosaurs did exist, then they were created by God as well.

There are things about God that can not be explained by us. Either we can not comprehend these things or He has chosen not to let us know certain things, at least not yet. I like to think of it as like trying to teach trigonometry to a toddler. What is the need for that? We teach toddlers what toddlers can learn at that time. We have to accept that we do not need to understand certain things about Him. It is ok to be curious about Him and I am sure that He even likes it.
