Is there a secret to covering up the unsavory wheat gluten taste that is often present in homemade seitan? I've tried all sorts of different spice combos, but can't seem to cover up that gluten taste... which is unfortunate because I'd like to get off real meat completely.

My favorite recipe is in the book Yellow Rose Recipes by Joanna Vaught. The book is published by Herbivore, and can be found on Amazon. Otherwise you can pulse walnuts (or a combo of cashews and walnuts), nutritional yeast and salt in a food processor.
I finally made this; I think it was the best seitan I've ever made. Very easy, too! Totally nonintimidating seitan. I'd never steamed it before. Sensing greatness and reading that they freeze well, I doubled the recipe. After putting half in the freezer and eating the rest for three nights in a row, I still had an unfrozen patty left over, so I crumbled it and put it on a whole wheat pizza crust with pesto, caramelized red pepper jam, vegan feta, and spinach. It was PERFECT.
Just discovering everydaydish so it's tough deciding which dishes to make first, but I think this one is definitely going on next week's menu. Can't wait!
They really are! All it takes is some garlic, diced tomatoes, oregano, taco seasoning, and of course, tofu. It was the first vegan meal I ever made and I still can't get enough of them!
Oh I didn't even realize you can use foil in a steamer!! I have a double-decker-type steamer.. How will the steam get up there with foil blocking the holes, though?
Somehow it works. I use smaller pieces of foil with 2 to 3 cutlets on them and place them in the steamer so that the steam can move around them. I've even stacked a few on top of each other and they've been okay.
OK... so I will not block the holes ALL the way, so that some steam can come through.. Also I guess panko is at Whole Foods, or do you order it online?
They might have panko at Whole Foods, otherwise try well-stocked grocery stores or Asian markets. You could also substitute dry, unseasoned breadcrumbs for the panko.

There is no real reason to use dried herbs in this. Go with fresh!

I steamed the cutlets in a steamer for 30 minutes. Shape the cutlets, place on a piece of foil and place in the steamer.
