i had a lil question though...im planning to make this yoghurt dip for eid and i cant find any greek youghurt here in mauritius...would normal yoghurt be ok for the dish along with kofta?
@yushra Yes you can use regular plain yogurt but you will need about 50% more as you will need to strain it to remove the excess liquid as greek yogurt is much thicker, strain it with a coffee filter or tea cloth in a colander, it will need to strain for approx 2 hours.
i found out, i think only the iraqis call it jajek
because in the lebanese restaurent they called it what you call it
its so yummy though :)
oh and i tried making this at home, and i very stupidly put it in the bullet blender and it became a yummy yogurt drink, but i was so looking foward to eating it with bread

@socaltrisha2004 or you can make your own, which is what I do. It's much cheaper. Measure out 2 quarts of milk into a pot, heat just below the boiling point. Let cool to 110 degrees. For each quart of milk, add 1 tablespoon of store bought yogurt (Dannon plain) Stir well and cover the quart jars with a clean blanket. Let sit for 10 hours, and you will have yogurt. This will be the only time you use store yogurt, after that to make more yogurt, use a tablespoon of the homemade.

i use the trader joes greek yogurt but i cant replicate it. mint or dill? i think that is the question. i have used dill, not mint yet. but for the life of me i think they use dill in it.

Absolutely! My husband hates cucumbers, but likes the yogurt and cucumber sauce. So i have to puree it for him, so he doesn't taste the cucumber chunks. But as far as the Persian cucumber goes, that is the preferable cucumber, but any cucumber will do. Try whole foods, or ask your local grocer.

yes you can, it will taste fine. Greek yogurt is a bit more sour so if you use plain white yogurt, you may need to add a little bit of lemon juice :)

I've made it a lot in the past week. I made it with
-500 grams of Greek yoghurt
-a few minced garlic cloves
- one large grated cucumber including skin (i didn't have the persian one)
- 4 tbsp extra virgin olive oil
- some lemon juice
- a few tbsp chopped fresh dill
- a few tbsp chopped fresh mint.
- black pepper and salt

Tzatziki is aslo great by itself or served with lamb souvlaki.
The tzatziki recipe I use is a little different, it's from my Cypriot ex, but, I'm anxious to try your method.
