  • okay so im making this for dinner , and as a skilled cook i have yet to figure out , when frying the eggplant how do i prevent from smoking out my entire house ... its so frustrating when in the dead of winter i have to open all my doors just to release the smoke ..lol its brutal .. and on every video i watch no one else is smoking out the joint .. is it just me ?

  • @mrockstar22 Don't have the heat so high. it'll still fry well even on Medium heat and wont be greasy coming out. I had it high today and reduced it, same result in the end. Anyone know how long it should be in, roughly 35 mins or until Cheese is melted?

  • Don't use Panko...I did it once, never again...it felt grainy in my mouth... gross..I'm Italian, my grand-ma taught me. wish she was still here.......home-made pasta hanging over her chairs....I;ma so sad, missa you grandma

  • I started making this from this vid a couple years ago. after dredging the eggplant i threw em in my deep fryer. it always turned out GREAT! anyway, I wanna make this again tonight BUT I'm wondering if it would be better to do it in a pan like in the video. crossing my fingers, hoping someone will give me an opinion on this in the next few hours cuz i gotta start in about 4 hours. anyhow, even with slight variations, this is DELICIOUS so thanks for posting :)

  • @thunderscratch66: When it comes to this recipe....I don't think it makes a difference whether or not you pan fry or deep fry....Deep frying might actually be easier!

  • @mzmarried07 yeah i went ahead and threw em in the deep fryer as usual, and it was delicious AS usual :) was so good infact i gave half the pan to my in-laws just to show off a bit.

  • @thunderscratch66 no, it doesnt really matter if you deep fry or pan fry. just make sure you have enough oil and dont burn them. What I think is more crucial is getting the water out of the eggplant. If you dont extract the water and fill your dish, eventually liquid will spill out into your oven and make a mess. But either way, its a fabulous dish and I'm sure was good. Of the two videos, I found the guy who makes his own mozzarella more appealing, just be sure you also use real mozzarella.

  • @iwanttoholdyourbigkn I went with the deep fryer again and it turned out great, again :) wait, i haven't done this recipe in 4 months?? wow, I know what i'm having for dinner tonight. it'll be a good chance to try out my brand new deep fryer. Just asked the wife to pick up some mozz n eggplant cuz i can't watch this vid without cracking hehehhee. btw, they said its okay to replace the parm, i do not agree. mozz n parm are what makes the recipe, that and a tasty tomato sauce. bon appetit :)

  • I want to share a story, the nest eggplant dish I ever tasted in my life came from my aunt in Lentini Sicily. She cooked it in a frying pan loaded with fresh tomato sauce, garlic & basil and fresh cheese (don't know what type) and she cooke it for a long time at low flame. If you know somebody who cooks good, please learn the recepie. My aunt passed away and I never asked her how she made that great dish.

  • @cargam1 you learned a valuable lesson a little too late. Either way, the products your aunt cooked with were probably superior to what you find in the USA. Try it sometime, I'm sure you can do it.

  • If you're going to fry them then you have to sweat the juice out or it will spatter.

    Otherwise you can just bake them.

  • The name of this dish is from the Sicilian world Parmiciana and it means "shutter" (the eggplants, cut like this and put on top of . It's got nothing to do with the Parma cheese, the Parmigiano. The original ingredients for the real, Sicilian Parmigiana di Melanzane are fried eggplants (without bread crumbs), tomato sauce with basil and onion, and Pecorino Siciliano cheese. Eventually some Caciocavallo cheese. But today, most people put some mozzarella on it as well.

  • Thats a good tip for the eggplant. Thats the way my mother showed me, and it has always been tasty as.  We used to leave the skin on as well.

  • We italians tend to salt the eggplant after slicing them and letting them excrete the excess moisture, this tends to take away the bitterness that eggplants have. Leave them salted for about an hour, then wash out the salt and continue with Dave's recipe.

  • I agree with this, purging the eggplant is almost necessary to get rid of the bitterness of the eggplants. I would never cook them without purging them first.

  • @cargam1 I'm s glad you said that. I hate to see folks spend all that money for ingredients, and do all that work, only to have it taste bitter. Bella!

  • @cargam1 Yes! And, remember to dry before coating with the flour. Using Panko bread crumbs makes them crunchier, too.

  • I do the same recipe,in general,but also with rigatoni and ricotta layered in, and sprinkled lightly with tabasco/paprika.
