This is one of my favorite parts of the UK Kitchen Nightmares. And this episode has a good end too. It looks like Brian and his wife are doing pretty well and the Fenwick Arms is getting some good business.

I know what they are , I make them every Sunday In the winter.
You didn't read my comment very well did you.
i stopped using gravy mixes the other year... i use bouillon or meat stock from the pan, with seasonings and a light roux to thicken.

It is absolutely lovely and each meal is a new experience for the taste buds.
