  • when it comes to peeling garlic, why not just use already peeled garlic? i buy mine at Walmart

  • Pros: Lively, good video quality, shows detailed step by step directions, ingredients listed at beginning (pause at :06 to copy down).

    Cons: 9 minutes is too long. Some scenes go on forever, like cutting the pork takes close to a minute (an eternity in watching a video).

    You may or may not like: there's no narration, no talking. But title cards give directions along the way. The music is semi-hard rock.

    On the whole: 4 stars. Easy to follow. Looks delicious.

  • If I could offer a suggestion it would be that you don't have to peel all those cloves of garlic once it has been roasted. Just squeeze the whole bulb and they all come out of their sleeves... You just then scrape it off the bulb. Hope that helps.

    However I have a different recipe that my dad taught me with no tomatillos and I thought I would try this one since I have seen a lot of youtube videos that call for adding several. Let me just say 10 tomatillos gives the green chili a very bitter taste! I will probably try maybe 4-5 tomatillos next time around.

  • A quick way to clean jalapenos is to cut off the stem end and roll vigorously between hands or on cutting board to break up the seed membranes inside. Then, simply roll out insides into trash bin. This saves time and fingertips trying to cut out seeds and membrane from halves of pepper. Also, pepper can be cut into rings and will already be seedless.

  • When cleaning a jalapeno, dont waste your time with a knife, just take a spoon run it down the jalapeno, and wala

  • Try cutting the root end of the garlic off so cloves are exposed, lay head on the foil exposed cloves up, sprinkle with evoo, roast with tomatillos. Then scoop out the roasted and soft cloves with a greatfruit spoon. I also suggest turning your tomatillos after they are brown, sprinkle with evoo and continue roasting for aq few more minutes.   • A couple of tips...1) slice the tops off the garlic bulbs before broiling and you save yourself a lot of hassle. 2) Ay caramba, don't load your pan up with that much meat at once or it won't cook correctly. Brown your pork in stages and reintroduce the full amount when each stage is browned. 3) You might consider broiling your jalapenos too, along with any poblano or ancho chiles you're using.

  • Looks awesome! CV is my favorite kind of chili. I roast the onions w/ the tomatillos tho, but no worries. If you want to save hassles, cut the ends of the garlic bulb off and brush w/ oil, then when they are done roasting you can just squeeze the garlic out. Oh, and no olive oil, I use corn oil so it doesn't cover up my special seasonings..cumin, cilantro, *cough* others too! ;-)

  • I made this. It was really good; but not as spicy as I would of liked. Would make again with some changes (maybe a little less garlic for me and more jalopenos, maybe another pepper as well.)

  • It would be easier to cut the heads of garlic when u roast them they will slide out of their skins.

  • Great video. Am hungry for chile verde, and your recipe looks easy enough. A hint: to clean your peppers, cut them in half, spear with fork, then use a small melon baller, or edge of a teaspoon, and scrape out the seeds and membranes. Don't have to worry about the oils on your skin. Works every time. Thanks for the post.

  • I think that if you've got a great recipe, awesome, post it as text. If you're basic cooking skills are as far away from par as this video displays, I think it's counter productive. I struggle with the ratio of 10 tomatillos with 3 heads of garlic (which cannot roast in 6-7 minutes in whole bulbs) The meat should have been browned in batches to develop flavour and the jalapeños should also have been roasted with the cumin seeds.

  • a tip for the roasting the garlic is to cut the tips off then roast them, after they are roasted you can actually just squeeze the garlic right out.... You might also try adding some Cumin.........= )

  • I'm glad I came across this. I make pork chile verde the exact same way! I don't know if you add spices other than what you show here, but I like to add about a half teaspoon of ground cloves and/or a tablespoon of ground comino to taste. I really love the way it comes out.

  • This recipe is very good for the newbies.. Recommend those who are not good at watching the oven to put a small amount of water in with the tomatillos. Heinous have you used a panini maker to grill onions? You have to try it.

  • You did a great job on this recipe but others who are not such good guards of the stove (broiler) need to put some agua puro on the bottom.

  • When the garlic part comes up peel them first then toss with quartered tomatillos ad olive oil before putting in oven to roast..just a tip great video

  • Great cooking videos Jesica ! I like your green chile receipe. Have you ever tried microwaving 5 or 6 cloves of garlic for about 10 seconds then peeling? Makes it so easy to peel and then you could roast them. Just a trick I have used :o)~

  • I have looked at a lot of videos where people make Chile Verde, but yours looks like it will taste the best. If I don't work tomorrow I will try to make your recepiet. If I do work, I will make it the next time I have a day off. I will also come back and let you know what I thought when I am done.

  • I just bought a pork roast to make this tomorrow. Great technique. Since we had a large family, Mama added potatoes to s t r e t c h her batch of chile. We bake it in the oven for 2 hours covered. Either way... this looks soooo deelish!

  • This is wonderful! I have been looking for a good recipe for this for a long time. One suggestion, though, with the roasted garlic: it is much easier to get the yummy roasted cloves out if you cut the whole garlic bulb across the top before putting it in the oven. Then you only have to squeeze the sides to get the cloves out.
